Scripts "set-blueprint-groupId.sh", "set-blueprint-version.sh" and "download-plugins.sh" Now Work on macOS

Scripts set-blueprint-groupId.sh, set-blueprint-version.sh, and download-plugins.sh have been adjusted to work on macOS without installation of additional tools, too. Group ID and version replacements now explicitly create temporary backup files that are deleted again automatically by the scripts afterwards.
